3 potatoes chopped

1 large onion sliced

1 Tbsp olive oil

8 Eggs

1 Cup whipping cream

2 Tbsp pesto

1/2 package cream cheese

2 prepared pie crusts in pan


Saute potatoes and opions in 1 tbsp olive oil. Season with salt and pepper to taste. Whisk eggs, cream and pesto together in small bowl. Put half of the potata onion mixture and half of egg mixture in each pie crust. Sprinkle cream cheese over. Bake in a preheated oven at 400 for 30-40 minutes. Makes 8 servings.
