Marinate cleaned shrimp in lime juice, salt, cumin 1 tsp, chipotle powder 1 tsp, salt. Finely slice red onion add vinegar 5 tbsp, salt and sugar 1 tsp and 5 tablespoon water. Roast 3 tomatillos, quartered, with 1 clove garlic, cumin 1 tsp, chipotle 1/2 tsp and salt to taste. Add to food processor and mince. Skewer the marinated shrimp, brush liberally with olive oil and grill 2 minutes or so. Heat corn tortillas on a skillet. Set up taco bar .serve shrimp on a taco, top with salsa verde and marinated onion, oregano and sour cream. Enjoy.
