Fresh tomato sauce

Fresh Tomato sauce

2 large ripe tomatoes
2 cloves garlic
1 tsp Italian seasoning
1 tsp chili flakes
2 tbsp extra virgin olive oil
Salt to taste

Place a box grater over a shallow bowl. Grate the tomatoes one at a time.  The peel will be left which can be discarded. Using the fine side of the grater, grate the garlic cloves. Powder the Italian seasoning and chili flakes. Add to the bowl with tomatoes. Add olive oil. Serve over cooked pasta. Garnish with freshly grated cheese. Top with a sprig of basil.
