Mango cranberry frozen yogurt

Ingredients 

3Cups sweetened mango puree(chilled)

2 cups yogurt

1 cup dried sweetened cranberries 

Method

In a large bowl mix yogurt and mango puree. Taste to ensure flavor is satisfactory. Add additional mango puree or yogurt as needed. Add to ice cream maker and churn 20 minutes add cranberries and churn 5 minutes more. Freeze 2 hours and scoop into bowl or cone and enjoy. Delicioso.

Salted Caramel Pecan Icecream

Salted caramel and pecan icecream
1 can dulce de leche
1 cup whipping cream
1 cup chopped pecans
1/2 tsp large flake salt
1 cup milk

Whip cream. In a large mixing bowl, empty can of dulce de leche. Add milk. Fold in whipped cream. Churn for 25 mins in an icecream maker. Add salt and churn 2 mins. Once churned, pour into mixing bowl. Add salt, pecans and fold. Transfer to a Tupperware and freeze tightly covered for 2 hours or more. Serve in cones or cups. Enjoy.

Banana-Nut overnight oats

Banana-Nut overnight oats
1 banana chopped
1/3 cup oats
1 Tbsp chia seeds
2/3 cup milk
1/3 cup yogurt
Cinnamon, vanilla, honey to taste
2Tbsp chopped pecans

Combine all ingredients in a Tupperware and refrigerate overnight. Makes 1 hearty serving.

Overnight oats

Ingredients
1/4 Cup oats
2 Tbsp chia seeds
1 apple chopped
Cinnamon
Vanilla
Honey 1Tbsp
1 cup milk
1/4 cup yogurt

Method
Combine all ingredients in a tupperware or large jar and cover. Cinnamon and vanilla should be added to taste. Refrigerate overnight. Makes 1 large serving. Garnish with toasted pumkin seeds if desired or walnuts or chopped almonds.

Bacon roasted potatoes


Bacon roasted potatoes

Ingredients
2 lb new potatoes cut in quarters
8 slices bacon

Line a baking sheet with foil
Preheat oven to 425
Layer the potatoes in single layer on baking sheet
Layer slices of bacon over the potatoes
Bake 35 minutes
Remove bacon slices and set aside on a serving plate
Return potatoes to oven for 25 minutes after flipping them on the baking sheet.
Season with salt and paprika if desired.
Enjoy. Makes 4 servings.
