Frou Frou Omelette


2 Eggs

2 Tbsp caramelized onions

2 slices chevre cheese

1 tsp butter

1 tsp oil


Heat the oil and butter on a skillet at medium high heat. Add the two beaten eggs. Spread the caramelised onion over the top and add pieces of chevre to intersperse with the onions. Fold over after 2 minutes when still moist inside. Serve with a nice simple green salad. Serves 1.
